Antoine de Saint Exupery's author's note on The Little Prince-- "not for grownups" -- is a bit facetious. If I were to suggest only one book for adults to read, this would be the title. I'm sure you can argue why this is the wrong decision, but this is my personal opinion and I'm sticking by it. Even throughout your teenage years, embarking on becoming an adult, you forget what it's like to be a child. This book is the perfect reminder that there is more to life than numbers, appearances or power.
